Lucky Green Pancakes: Easy and Healthy St. Patrick's Day Breakfast

These pancakes are a testament to fun, color, and a delightful breakfast idea that satisfies hunger in the most festive way. Using a variety of wholesome ingredients, we’ll be making our version of healthy green pancakes on St. Patty’s Day  without using  any artificial food coloring! With bananas, eggs and  SHHH! We’ll add in some fresh spinach to give pancakes a green hue, making breakfast  for kids  both pleasing and veggie-packed.Get ready to have your little leprechauns join you in the kitchen, mixing and whisking away, creating a final meal that’s both beautiful and delicious!

Healthy Green Pancakes (St. Patrick’s Day Special)

With coconut flour’s natural mild sweetness and fiber richness, these St. Patty’s Day breakfast pancakes are absolutely amazing. Kids can pick their favorite toppings, creating a fun-filled and delicious experience they’ll love! 

Ingredients:

Steps to follow:

1. Blend the spinach mixture:
In a blender, combine spinach, banana, eggs, vanilla extract, and milk. Blend until smooth.

2. Add the dry ingredients:
In a bowl, whisk together coconut flour, arrowroot starch, Himalayan pink salt, cinnamon powder, and your chosen sweetener.

3. Combine wet and dry ingredients:
Pour the blended spinach mixture into the dry ingredients and stir well to form a thick batter. Let it sit for 5 minutes to allow the coconut flour to absorb moisture. Adjust with a little more milk to reach your preferred consistency.

4. Cook the green pancakes:
Heat a non-stick pan over medium heat and lightly grease with butter. Pour small portions of batter onto the pan, shaping them into circles or fun shamrock designs. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

5. Serve and enjoy:
Stack the pancakes on a plate and let your little leprechauns choose their favorite toppings!
