Brown Lentil Curry Recipe

  1. Prepare the lentils:Rinse the brown lentils thoroughly. Cook them in a pot of lightly salted water until tender about 30 minutes. Set aside
  2. Build the flavor base: Heat olive oil in a deep pan over medium heat. Add cumin seeds and let them sizzle until aromatic. Stir in the bay leaves, followed by the sliced onions. Cook until the onions are soft and lightly golden.
  3. Add spices:Mix in the ginger garlic seasoning and cook for about 1 minute. Add turmeric, ground red chili, red chili powder, and salt. Stir well to toast the spices gently without burning.
  4. Add tomato and simmer:Add the chopped tomatoes and cook until they break down and leave an aroma. Stir in the cooked masur lentils and let everything simmer together for up to 5 minutes.
  5. Finish with coconut milk:Pour in the coconut milk, stirring gently to combine. Simmer for another 5 minutes until the curry is creamy and well balanced. Sprinkle in garam masala and adjust seasoning if needed. Add some lemon juice and serve.
