1 cupPride of India Quinoa & Brown Basmati Mix
2 cups water or broth (for cooking the grains)
1 cup mixed veggies, finely chopped (bell peppers, cucumber, cherry tomatoes, carrots, etc.)
¼ cup dried cranberries
¼ cup chopped pistachios
2 tbsp olive oil
1 tbsp lemon juice
1/2 tbsp Pride of India Ginger Garlic Seasoning
Salt & pepper to taste
Optional: fresh herbs like cilantro
Cook the Grain Base
Rinse the1 cup Quinoa & Brown Basmati Mix. Add to a pot with2 cups water or broth.
Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, until fluffy.
Prep the Veggies
Finely chop your choice of fresh veggies. Cherry tomatoes, cucumbers, and bell peppers work especially well.
Mix the Dressing
Saute the veggies in olive oil, add some lemon juice, Ginger Garlic Seasoning, salt, and pepper. Taste and adjust seasoning.
Mix the Quinoa Rice
Add the cooked quinoa basmati mix and toss everything well.
Add Festive Toppings
Stir in the dried cranberries, pistachios and fresh herbs.
