6 bell peppers (orange or red)
1 cup POI's Bolivian red quinoa, rinsed
2 cups water
½ cup POI' Split red lentils, soaked for 30 minutes
1 onion, finely chopped
1 cup celery, chopped
1 cup carrots, chopped
1 tbsp POI's Minced garlic
2 tbsp tomato sauce
2 tbsp olive oil
Himalayan salt, to taste
In a saucepan, combine rinsed quinoa, soaked lentils, and 2 cups water. Bring to a boil, then simmer for 20 minutes until tender. Set aside.
Cut off the tops of the bell peppers and remove seeds. Carefully carve Jack O’ Lantern faces into the sides for a spooky touch.
Heat olive oil in a skillet. Sauté onion, garlic, and vegetables until soft (7 mins). Stir in tomato sauce, lemon chili pepper seasoning, and salt.
Add cooked quinoa and lentils to the sautéed mixture. Mix thoroughly and cook 2–3 more minutes to blend flavors, adding a splash of water if needed.
Fill each pepper with the quinoa-lentil mixture and replace the tops. Bake at 180ºC (350ºF) for 25 minutes until the peppers are tender.

2 cups POI's Brown rice flour
½ tsp baking soda
½ tsp Himalayan salt
¼ cup butter (room temperature)
¾ cup sugar
1 tsp vanilla extract
2 tbsp chia egg (prepared in a 3:1 water-to-chia ratio)
Directions
In a bowl (or using an electric blender), add the butter and sugar. Whisk for 2 minutes until soft and creamy.
Add the chia egg, turmeric spice mix and vanilla extract. Mix until well combined.
Add brown rice flour, baking soda, and Himalayan salt. Mix gently to form a dough.
Roll out the dough and cut into spooky Halloween shapes using cookie cutters.
Place the dough in a covered bowl and let it rest in the fridge for at least 2 hours.
Preheat the oven to 150ºC (300ºF). Bake the cookies for 7–10 minutes.
For crunchier cookies, return them to the oven and bake for an additional 10 minutes at 150ºC.
